2026 GUMBO Day at Eggs by the Bay Gumbo Cook- Off
Cooking Guidelines
-Team fees are $50 send in fees with registration form (form is below).
-We will have 5-7 Teams.
-Team are limited to 3 members. One member needs to be a Big Green Egg owner. No team memebers can judge.
-Gumbo: Gumbo Roux, rice and smoked meats can be cooked beforehand. We will come by and do a quick inspection to see what componets are precooked offsite. Gumbo must be built onsite.
-Team set-up starts at 8:00am.
-Judging starts at 11:30am.
-Teams will be provided the following:
-a 10x10 popup.
-2 long tables (tables must stay in position as we set up 1 in front to serve off of, with red table cloth, 1 back table to prep food).
-A Big Green Egg (Large or XLarge)which will be lit and ready to cook, conveggtors will be in place as well.
-Our Eggs by the Bay kitchen facility will be available for dish washing only. No cooking or prepping in kitchen will be allowed.
-Cook space will not have power.
-Coffee and Donuts to help start your day.
-Cold drinks during the day.
-20% off all Eggs by the Bay purchases that day.
-5 quarts minimum required-if you have a larger pot, it needs to fit inside a Large Egg.
-Serving supplies will be provided (cups and spoons).
GRAND PRIZE winner to receive a $400 Gift Certificate from Eggs by the Bay.
Things teams need to bring-
-All food products in safe conditions chilled in coolers.
-Any water you need for cooking.
-Menu printed (we will prvide plexi holder for front table).
-Chairs, a couple folding chairs to help relax.
-All needed cooking utensils.
-Dutch oven for Gumbo, must fit in Large Egg (12qt max).
-Cutting baord.

GUMBO Day Judging Criteria:
1. Appearance-looks like a good gumbo-roux color, medium chocolate brown.
2. Aroma- should smell appetizing. It will differ with ingredients, shouldn't be overpowering.
3. Consistency-stirs like a good gumbo-thickness of base etc.
4. Texture- Balanced quantity of ingredients. Check for grease on top.
5. Flavor- tastes like a good gumbo, pleases palate.
• 5- Excellent
• 4- Very good
• 3- Average
• 2- Below average
• 1- Unfit for human consumption
SAMPLES FOR THE CONTEST WILL ONLY BE TAKEN FROM LARGE POTS.
People’s Choice Tasting and Judging will only be taken at 12:00 pm.
Winners announced at 1:00 pm.
Your team number and name will be on plaquard on your front serving table.
GUMBO Day Tasters
-$20 Taster fee, send in with registration forms (form is below).
-Free cold drinks while from 11:30 til 1:00pm.
-Tasters meeting will be held at 11:20am, will go over judging criteria (listed above), check in once you arrive.
-Clipboards and judging sheets provided. (bring ink pen).
-20% off all Eggs by the Bay purchases that day.
